Many thanks for your Lake Superior trip descriptions, and I read over your equipment list with interest.  I wrote an article on cruising in a small sailboat for another website (using the Ultimate 20 sailboat which I own besides the Potter) because I faced many of the same space restrictions as you.

One handy thing that I've taken along is a Seyvlor inflatable kayak.  It's a bulky 25 pounds, but it still folds into a manageable bundle.  It greatly extends your touring capabilities by allowing exploration at anchor.  I bring it along on both my Potter 15 and the Ultimate 20.
