On my P14 I use the regular jib sheet routing except run the sheet through
a block on the end of the jib boom instead of tieing it to the jib. I can
thus trim the jib from either side.

I think larger boats usually use a towel-rack-shaped traveler on the
foredeck with a single line sheet run forward to the tack, then aft.
