I have been single-handing to date, or have had a novice as a
passenger. I always have rigged on shore (with sails hauled down, of
course) -- for two reasons:
1. I want to be ready to sail away from the ramp/dock immediately
under full control. Having to find a place to anchor or drift to
finish rigging seems dangerous to me. In addition, if it is windy, a
minor mistake in handling a sail could lead to a capsize.
2. I never go forward on my P15 under way if there is an alternative,
as I am a big guy. Perhaps if I had a well-schooled and dependable
lightweight for a crewmate, it would be realistic to rig a headsail
after launch. My wife, Barbara, is learning rapidly, and may be ready
to tackle headsail changes this year. This would greatly increase our
options.
