It takes me about an hour and a half to set up and launch my P-14--the best that I have ever done is an hour and a quarter. At least part of the increase in time rigging my boat over the rigging time for a later model P-15 is taken up in completely disassembling the rig--the mast in the old gunter rigged boats is stelled through the deck onto the v-berth rather than stepped on deck, and everything has to be disconnected to get the mast down. And there's an additional spar, and my Potter has a towing cover.
