Why not mount the head into and beneath the cockpit seats like people do
storage boxes. You can put one on each side of the cockpit for each tack,
plus you can still sail, all without moving. With some modification you can
make the lid flush with the cockpit seat top (no pun intended) and even have
pumpable ballast.
