"Is this overkill for a Potter?"

I always felt every sailboat should come from factory with a depth finder. It
helps a lot to know how deep the water is before you dive in, when you
anchor, when entering a strange area/harbor and when you run aground. Yep!
you only find out how deep water is after you are aground.

Speed you can get from a gps. Which is great to have only if you sail at
night or offshore. Not so much for lake sailing. Not really a critical piece
of equipment as it is not that accurate anyway...

Water temp is good to know before you jump in. To avoid a shock to the system.

I guess you could say every toy you think you need, you need!

include depth, water temp, speed over ground, trip log, position data,
waypoint settings, etc. Is this overkill for a Potter? Anyone familiar
 with this product?
